Xinomavro
The centuries-old cultivation of the Xinomavro grape variety in the Amyntaios region yields the exceptional Xinomavro Vegoritis. This variety is characterized by its high acidity, presenting a challenge that we bravely undertake to tame while preserving its rich tannins. Xinomavro offers a diverse range of wines, from dry reds suitable for long aging to blanc de noir (white from red grapes), rosé, sparkling, and even sweet wines made from dried or dehydrated grapes. On the nose, Xinomavro exhibits a distinctive vegetal character, highlighted by notes of tomato, red pepper, and ripe red fruits. Additionally, aromas of olive pâté, both green and black, can be detected. In fresh Xinomavro wines used for rosé production, aromas of red fruits such as strawberry, cherry, gooseberry, and cranberry emerge, accompanied by floral notes of rose and violet. As these wines age, their aromatic profile expands to include earthy notes of mushrooms and truffles, as well as hints of spices, leather, tobacco, and chocolate, especially when oak barrels are used in the aging process.

Syrah
An international grape variety that has thrived in the microclimate of Amyntaios, it boasts a notably dark color compared to the light ruby hues of Xinomavro. On the nose, characteristic aromas of leather and black pepper are prominent, while aging in oak barrels imparts additional notes of mocha and rounded tannins. With a full-bodied mouthfeel, it offers a wealth of evolving aromas, influenced by the vintage and alcohol content.

Cabernet Sauvignon
With its deep purple hue, the Cabernet Sauvignon from the Amyntaio region promises a full-bodied red wine experience. Thanks to the altitude of the region, the wine exhibits characteristic aromas of green pepper, black cherry fruit, gooseberry, and hints of milk chocolate, attributed to pyrazines. As the wine ages in the bottle, additional aromas of black pepper, graphite, and subtle tobacco emerge. In the mouth, the wine's high alcohol content and elevated acidity, influenced by the terroir of Amyntaios, impart a spicy mouthfeel with a lingering aftertaste.

Sauvignon Blanc
An international grape variety that has found its ideal soils in Greece, particularly in the unique microclimate of Amyntaio, where it can showcase its best characteristics. Its early ripening allows us to observe the variety's virtues at various stages of maturity. Typically, it presents aromas of green grapefruit, freshly cut greens, and green pepper, while riper instances reveal notes of ripe grapefruit, pineapple, and peach. In the mouth, the wine reflects the region's typical acidity, enhanced by its lees aging, which imparts richness and a lingering aftertaste. This lingering sweetness is balanced by the wine's high acidity. It pairs well with dishes such as herb-roasted chicken or pork, grilled shrimp, and oily fish.
